Great Easter Recipes!

Baked Ham and Cheese Omelet Roll

A great, easy way to make omelets. Feel free to add additional ingredients to suit your tastes sausage, bacon, onions, etc.)

6 eggs
1 cup milk
1/2 cup all-purpose flour
1 tsp Aussie Outback Rub
1 cup cooked ham, chopped or 9 slices of any deli

ham
1 cup shredded sharp cheddar cheese

1. Preheat oven to 450 degrees.

2. Beat eggs and milk until fluffy.

3. Add flour and Aussie Outback Rub and beat or whisk until smooth.

4. Pour into a buttered or greased 9 x 13 baking dish or pan.

5. Bake for about 15 minutes or until eggs are just about set.

6. Sprinkle with chopped ham or lay slices of ham evenly on top.

7. Sprinkle with cheese.

8. Bake for about 5 minutes more or until cheese is melted.

9. Starting at short side, roll up omelet while still in pan.

10. Place seam side down on serving dish.

11. Cut into slices.

Curry Ham Marinade

1/2 cup ginger ale
1 cup orange juice or pineapple juice
1/2 cup Tarragon and Garlic Vinegar
1/2 cup brown sugar
3 tbsp vegetable oil
3 tsp Lemon Ginger Curry
1/4 tsp ground cloves

1. Mix all marinade ingredients.

2. Put ham and marinade in resealable plastic bag.

3. Marinate ham slice a few hours or overnight.

4. Fire up the grill or broiler or even heat in a pan on top of the stove.

5. Cook ham until done and heated through.

6. Baste during cooking.

7. Sprinkle with Lemon Ginger Curry.

Cinnamon Raisin Bread With Maple Glaze

1 cup water (110 F)
1/4 cup maple syrup
1/2 tbsp yeast
5 cups all-purpose flour, more or less
1 1/2 cups oatmeal, hot
4 tsp butter
1 tsp salt
2/3 cup raisins
2 tsp Chinese 5 Spice

GLAZE:

3 tbsp maple syrup
1 cup Orange Vanilla Sugar

1. In a mixing bowl, stir together warm water, maple syrup and yeast.

2. Set aside for 5 to 10 minutes.

3. Meanwhile, make the oatmeal (per directions on the package) and add butter.

4. Stir to melt butter.

5. When the yeast mixture is bubbly, add 3 cups flour, oatmeal, salt and raisins to the yeast mixture.

6. Mix on low speed until incorporated.

7. Keep adding flour 1/8 cup at a time until the dough comes together and is only slightly tacky to the touch. The dough will be very soft and somewhat sticky.

8. Place dough in a greased bowl, cover with plastic wrap and place in a warm place to rise until double in size (about 40 to 60 minutes).

9. Spray a 9″x5″ loaf pan with non-stick cooking spray.

10. Turn the dough out onto a lightly floured surface and knead the Chinese 5 Spice in by sprinkling a little in top, kneading and turning dough, and repeating the process until all the Chinese 5 Spice is used.

11. Place the dough in the prepared loaf pan and place in a warm place to rise.

12. When the dough has risen about 2″ above the pan, put into a preheated 350 F oven and bake for about 30 minutes. The crust will be golden brown.

13. Remove from pan and place on a cooling rack.

14. Once the bread has cooled, mix the Orange Vanilla Sugar with 3 tbsp of maple syrup.

15. Add 1 or 2 tbsp of water to thin to a pouring consistency.

16. Pour glaze all over the top of the bread, letting it run down the sides.
